Here you can taste the typical Marches's cuisine of Mrs Marisa Piccinini: home made pasta, to say noodles, gnocchi, calcioni (a sort of ravioli with cottage cheese) all seasoned with different sauces: with duck or mushrooms or vegetables in season (asparaguses, nuts, etc.) or black superior truffle.
The roast meat (pigeon, chicken, stuffed rabbit, lamb) is cooked in a wood burning oven. Other meat dishes are marinated wild boar or jugged goose. The bread, every time possible, is baked in the wood burning oven.
The home made sweets are "ciambelloni", jam tarts, "cavallucci" (stuffed with jam, nuts, "sapa", wich is a kind of cooked concentrated wine) between the dry ones and cream on sponge cake, "tiramisù", cooked cream, between the fresh ones.
